Delicious, supple, generous.
This Winemaker's Cut wines come from vineyards in Oliver, which rely on no pesticides or herbicides, which means their focus leans toward natural wines. Ideally, in the winery, they use only native yeast, no, or minimal fining (only bentonite and time), and very light or no filtration at all.
This vintage went through a spontaneous/wild ferment in stainless steel, went through a full secondary fermentation and spent 6 months in a mix of French Americana and Slovakian oak.
A consistently generous and fleshy wine, it doles out sweet aromas of black raspberry, licorice, baking spices and vanilla, wich are woven with dark chocolate, cedar chips, violets, white pepper and bacon fat. It is fresh, has lovely weight, suppleness and concentration. Flavours of espresso, oak spice, white pepper and bittersweet cocoa trail across the finish.
A delicious wine for hearty proteins, ratatouille, aged goat cheese, roasted mushrooms.
